Rosemary is one of the most aromatic and intense of all the herbs. Its needlelike leaves have pronounced lemon-pine flavor that pairs well with roasted lamb, grilled chicken, garlic, and olive oil. Rosemary is also a nice addition to focaccia, tomato sauce, pizza, and pork, but because its flavor is strong, use a light hand.

Do chop rosemary leaves finely if you are not using whole sprigs. Rosemary has needle-like leaves that can be tough, even after they have been cooked for a long time. It is a good idea to remove the leaves from their stems and mince them before adding them to a dish. They can be easily separated from their stems by pinching the stems between your thumb and forefinger and running your fingers in the direction to which the leaves are growing.

Besides its delightful taste and smell, Rosemary is also renowned for the many health benefits it possesses. A good source of iron, calcium and vitamins A, C, and B-6, rosemary has been used for its medicinal purposes for centuries.
